We’re talking about cooking this Thursday noon in RTL INFO with You with Julien Lapraille, candidate for the Top Chef show in 2014.

1 Refine the endive

THE seasonal vegetable, for Julien Lapraille, is chicory, “which happens more and more on the plate”and who is “slowly coming out of this hidden land”. And to cook it, nothing could be simpler: a stock of water, butter, salt and pepper! And our guest insists: “Stop putting sugar in the cooking of chicory” to remove its bitterness… It loses all its charm there! The butter will be enough to honor the endive.

2 Dare the salsify

For Julien Lapraille, the other vegetable of the moment is salsify. “I used to hate salsify, now I love it”, he says on our set. What has changed? Learning to cook – to be applied like chicory – but also seasoning. Julien Lapraille’s little extra is to cook the salsify in coffee… “It’s just delicious, it changes the taste, it’s creamy and greedy”, he assures. And for salsify just like endive: wash your vegetables well: the fresher they are, the more soil they will be.

3 Taste the game

To try out game, Julien Lapraille advises taking a classic size “about 10 cm” for the piece to be cooked in butter, of course. And to reduce the strong taste, our Belgian cook recommends putting “a tiny bit of cork syrup”, to break the strength of the flavor, and for the greediest, cocoa! Any other trick from Julien Lapraille, to prepare the taste buds for game: first eat a duck breast before developing the taste in the mouth. “Quite simply!”
